 辣白菜(ラーパイツァイ) 白菜は長さ8cmに切ってから5mm幅の細切り。 塩をして重しをして１時間。 砂糖、酢、塩を混ぜたタレに 水気をきつく絞った白菜を和えます。 上に千切りの鷹の爪、生姜を乗せます。 サラダ油、ごま油に粒の花椒を入れて火にかけます。 香りを出してこげないうちに取り出します。 その後煙が立つほど油を熱し 白菜の上からジュッと回しかけます。 蓋をして３０分以上おいて味を馴染ませます。 | . | ||
